Where do my fish come from?
The fish are obviously caught right out of the lake. But how do they manage to do this? First dive teams and a boat are set up for each station of the lake. The divers go down with huge fine meshed nets about 10 meters long, by 2 meters deep. The local Malawi divers become very skilled with these nets, and they swim at either end, trapping any fish within the net.
You obviously cannot pull a fish from where it resides 25 meters deep, and just bring it up by the nets. Thus, the fish are pulled up slowly in cage-like drums slowly to acclimatise them to the new depth. Depending on the fish, often with the Cyphoyilapia species from the congo, it may take days to do this process. When reached to the surface, the fish are then taken to the diver's station on the lake side in holding tanks. All the stations then cart their fish collection down to Head Quarters and put into a facility ready for shipping. Here are some photos of a catching station in the congo:
Next, when ordered, the fish will be carefully selected and examined. They make sure that the fish shipped are 100% healthy and nicest stock. The fish then have a long journey to North America. The fish get shipped first class courtesy of British Airways and West Jet.
